My take on the dead man in Yossarian's tent are several levels of complexity. Heller writes in such a way as to leave so much up to you the reader to invent or interpret.

Unlike many unknown soldiers who were listed missing in action, this man is simply missing period. You can imagine a war of memo's between the rear and the 256th saying "it's your problem he left here" and "no it's your problem he never go here".
For those of us who have served in the military, it is especially funny, because signing in or out of a unit takes a full day, sometimes several days! Kit must be signed for, or returned, damage paid for, pay documents transfered, medical records forwarded. You walk 10 miles just going from one office to another getting stamps on a piece of paper saying the necessary paper work is being done by that office.
You can look at it as the height of efficiency or the height of stupidity and redundancy... but it is how the military has evolved, and I bet 200 years ago it was nearly the same, in war, and in peace... Military routine is done so no i's go undotted, and no t's go uncrossed. They are made so simple that even the most backward redneck, inbred borderline retarded man (like Gomer Pyle) can follow the rules.
That something can slip between the cracks is unthinkable, so the military reacts as it always does when confronted with something it is unprepared for...deny it exists. Say it can't happen, don't allow for the unexpected.
All this is what the Dead Man represents.

You make me sound like some big thinker...I am not, I just get a sense of how the book seems, or a chapter or a character, then I try to see how else it might seem. You don't have to agree with me you know? Your interpretation is as valid as mine. I wonder sometimes if Heller himself knew what exactly each character was to represent or mean? I don't think he does much without a lot of thought. Reading the book is hard, writing it must have been tremendously difficult. So many literary rules are just tossed aside and new ones made up as he goes. Actually I think the only rule he uses is Catch 22, if there is a rule you have to ignore it!
